Lemon Zucchini Vichyssoise

Ingredients

• 1 lg Leek (bulb only), washed
• 3/4 c Onion finely chopped
• Lemon slices for garnish
• 1 tb Garlic minced
• 2 tb olive oil
• 1 ts Salt
• 1/2 ts Pepper
• 3 c Low salt chicken broth
• 1 1/2 Zucchini, sliced thin
• 1/2 lb Russet potatoes, peeled and
• 1/3 c Heavy cream
• 1 tb Fresh lemon juice, to taste
• Ice cold water
