• 3 pounds Steelhead trout from Norway fillet, skin on
• 1 clove garlic
• 2 tbsp sugar, brown
• 2 tbsp ponzu sauce
• 1 tbsp lemon zest
• 2 tbsp parsley, fresh
• 1 tbsp cilantro, fresh
• 2 tbsp thyme, fresh
• 0.5 lemon, juiced
• 2 tbsp sesame oil
• 1 dl extra virgin olive oil
• salt and pepper
• 6 lemon wedges
• 6 sprig thyme
