Chocolate Gingerbread Cookies - The Local Palate

Ingredients

• 2 cups all-purpose flour
• 1 cup plus 1 tablespoon cake flour
• 2½ teaspoons ground ginger
• 1 teaspoon ground cinnamon
• ½ teaspoon ground cloves
• ½ teaspoon ground nutmeg
• 1 teaspoon baking soda
• ½ teaspoon sea salt
• 2 tablespoons plus 1 teaspoon cocoa powder
• 1 cup butter
• 2 tablespoons freshly grated ginger
• 1 packed cup brown sugar
• 1 cup molasses
• 1 teaspoon vanilla extract
• 2 cups chocolate chips (Clifford recommends bittersweet Ghirardelli chips)
• Turbinado sugar for sprinkling
