Ingredients

• 1 lb asparagus, trimmed
• 1 sheet frozen puff pastry, thawed
• all purpose flour, for dusting
• 1 C grated fontina cheese
• 1 C grated comte or gruyere cheese
• 1 T minced shallot
• 2 lg egg yolks
• 3 T whole milk
• 1/8 tsp freshly-grated nutmeg
• kosher salt & fresh ground pepper
• 2 tsp EVOO
• 1/2 tsp finely grated lemon zest
