SIRENA Tuna Vitello Tonnato

Ingredients

• 185 g can SIRENA TUNA in Oil
• 1½ cups egg mayonnaise or a good store bought egg mayonnaise
• 2 tbsp capers in vinegar
• 1 tbsp lemon juice
• ½ tsp salt
• ¼ tsp ground pepper
• 1.2 kg of veal silverside or girello (turkey breast can be used as an alternative)
• 1 small onion
• 1 small carrot
• 2 stalks celery
• 1 tbsp salt
• 1 tsp peppercorns
• 3 egg yolks
• 400 mls light olive oil
• ¼ tsp salt
