Ingredients

• 3 1/3 cups all-purpose flour
• 1 cup water
• 2 tablespoons vegetable oil (plus 3 tablespoons)
• 1 small onion (finely chopped)
• 4 oz. shiitake mushrooms (115g, chopped)
• 6 dried shiitake mushrooms (reconstituted and chopped)
• 1 pound ground chicken (450g)
• 2 teaspoons sesame oil
• 3 tablespoons soy sauce
• 1 teaspoon sugar
• 2 tablespoons Shaoxing wine (or dry cooking sherry)
