Hummingbird tray cake

Ingredients

• 3 cup self-raising flour
• 1 2/3 cup firmly packed brown sugar
• 2/3 cup desiccated coconut
• 2 teaspoon mixed spice
• 3 cup grated carrot ( from 3 large carrots)
• 440 gram can crushed pineapple in syrup, drained
• 4 eggs, lightly beaten
• 1 1/4 cup sunflower oil or vegetable oil
• 1/3 cup flaked coconut, toasted, to decorate
• Cream cheese frosting
• 200 gram cream cheese, at room temperature
• 50 gram butter, at room temperature
• 1 teaspoon finely grated orange zest
• 1 1/2 cup icing sugar
