Tapunu Vava'u is an authentic Polynesian dish featuring succulent pork and root vegetables wrapped in banana leaves and ti leaves, infused with aromatic spices
Ingredients
- Pork - 2 lbs, preferably shoulder or belly for optimal flavor
- Taro - 4 large pieces, peeled and cubed
- Sweet Potatoes - 3 medium-sized, peeled and cubed
- Coconut Milk - 2 cups, freshly squeezed if available
- Onions - 2 large, sliced
- Garlic - 4 cloves, minced
- Ginger - 1 small thumb, grated
- Lime - 2, juiced
- Banana Leaves - enough to wrap the pork and vegetables
- Soy Sauce - 1/4 cup
- Salt - to taste
- Black Pepper - to taste
- Ti Leaves or Aluminum Foil - for wrapping
