  • Sweet Potatoes - 3 medium-sized, peeled and cubed
  • Coconut Milk - 2 cups, freshly squeezed if available
  • Onions - 2 large, sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1 small thumb, grated
  • Lime - 2, juiced
  • Banana Leaves - enough to wrap the pork and vegetables
  • Soy Sauce - 1/4 cup
  • Salt - to taste
  • Black Pepper - to taste
  • Ti Leaves or Aluminum Foil - for wrapping
