Ingredients

• 3 lbs beef shanks , boneless long-cut
• 5 cloves garlic ,
• 5 allspice berries ,
• 4 bay leaves ,
• 1 1/2 tsp peppercorns ,
• 2 onions , large, halved and sliced
• 2 1/4 cups dry white wine ,
• 1/4 tsp ground cinnamon ,
• 8 ounces chorizo sausage , Spanish-style, cut into 1/4 inch-thick-rounds
