Abuela Marcelina's Chicken Fricassee - Sanderson Farms

Ingredients

• 4 pounds of Sanderson Farm’s Chicken Thighs
• ¼ cup olive oil
• 2 packets of Sazon can Azafran
• Adobo to taste
• 2 yellow onions, diced
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• 2 tablespoons minced garlic
• 2 bay leaves
• 1 cup dry white wine (we suggest Chardonnay)
• 28 ounces crushed tomatoes
• 2 cups chicken broth
• ½ tablespoon cumin
• 1 tablespoon dry oregano
• 2 teaspoons of sugar
• 1 cup of Spanish olives
