Tasty fish cakes made using roasted sweet potato, cooked to give a slightly caramelised flavour. A nice change from traditional fish cakes.

- 1 tbsp Rapeseed oil
- 1 clove Garlic
- 600 g Sweet potato ((peeled and diced))
- 400 g Cod fillet ((skinless and boneless))
- 1 tsp Smoked Paprika
- 1 tsp Coriander ground
- ½ tsp Oregano
- ½ tsp Salt
- ½ tsp Pepper
