Meatball Stew - Serving Dumplings

Ingredients

• 2 pounds ground pork (or chicken, or beef)
• 1 egg
• ½ cup breadcrumbs
• 1 tsp dried onion
• 1 tsp salt
• 1 tsp coarsely ground black pepper
• 1 tbsp olive oil
• 1 tbsp unsalted butter
• 4 garlic cloves (minced)
• 1 onion (diced)
• 2 carrots (peeled and chopped)
• 3 tbsp tomato paste
• 1 tsp smoked paprika
• 1 tsp dried oregano
• 2 potatoes (medium, peeled and chopped)
• 1 can (14 oz/390 g) white beans
• 2 cups chicken broth (more if needed)
• 2 tbsp chopped parsley
