• 18 vine tomatoes, peeled, deseeded and roughly chopped
• 1 red chilli, deseeded and finely chopped
• 2 tbsp red wine vinegar
• 2 tsp sugar
• 100g (4oz) bulgur wheat
• 500g (17oz) minced beef
• 1 tbsp oil, plus extra for frying
• 1/2 small onion, finely chopped
• 2 garlic cloves, crushed
• ¼ tsp ground cinnamon
• handful mint leaves, finely chopped
• handful parsley leaves, finely chopped
