Orzo Salad with Grilled Vegetables and Chicken

Ingredients

• ½ cup Colavita Extra Virgin Olive Oil
• ¼ cup Colavita White Balsamic Vinegar
• 1 tsp dijon mustard
• 1 tbsp fresh oregano, minced
• 2 cloves garlic, minced
• ½ tsp fine grain sea salt
• ¼ tsp ground black pepper
• 4 tbsp Colavita Extra Virgin Olive Oil
• 1 tbsp fresh lemon juice
• 2 tsp Colavita White Truffle Balsamic Glaze
• Salad and Assembly
• 1 lb asparagus, ends trimmed
• 2 small zucchini, about 5 ounces each, quartered lengthwise into spears
• 1 small red onion, cut into ¼ inch circles, rings kept together
• 3 chicken breasts, about 1½ pounds total
• ½ cup Colavita Sun-dried Tomatoes, roughly chopped
• 8 oz Colavita Orzo, cooked according to package directions
• 4-6 oz arugula
• ½ cup shaved parmesan cheese, plus extra for sprinkling on top
• Colavita White Truffle Balsamic Glace for drizzling, if desired
