Hueveos Rancheros Oatmeal - Flahavan's

Ingredients

• 1 corn on the cob
• 1 2/3 cup black beans
• Small bunch of coriander
• Pinch of sugar
• Juice and zest of 1 lime
• ½ clove of garlic
• 2 1/2 tbsp. extra virgin olive oil plus an extra splash for frying
• 4 cups vegetable stock
• 1 tsp. chipotle chilli paste
• 1 1/4 cup of Flahavan’s Rolled Oats
• 2 eggs
• 1 avocado, peeled and sliced
• A handful of tortilla chips, lightly crushed
• Spring onion, sliced
• Salt and pepper
