Ingredients

• 2-3 carrots, sliced
• 1 stalk celery, sliced
• ½ onion, sliced
• 2 cloves garlic, minced
• 5 cups vegetable broth
• 1 cup water
• 1x 400g tin of diced tomatoes
• 1 potato, diced
• 1 teaspoon Italian seasoning
• Salt and pepper
• 1 cup alphabet noodles
• 2 tablespoons olive oil
• Bunch of parsley
