Berry Easter Bunny Cake - Wish Farms

Ingredients

• 1 cup butter
• 3 cups sugar
• Zest of 1 large lemon (optional)
• 8 egg whites
• 1 tbsp vanilla
• 4 cups all purpose flour
• 2 tsp baking powder
• 1 tsp baking soda
• 1/2 tsp salt
• 2 2/3 cup buttermilk (or 2 1/4 cup whole milk and 1/4 cup lemon juice)
• 2/3 cup sprinkles (optional)
• 8 oz cream cheese, room temperature
• 1 cup butter, room temperature
• Zest and juice of 1 lemon
• 2 tsp vanilla extract
• 6-7 cups confectioner’s sugar
• 2-3 tbsp milk
• Wish Farms blueberries
• Wish Farms strawberries
• Coconut shavings (colored with green food-coloring)
• Black gel icing (or food coloring to dye a bit of your cream cheese frosting)
