Ingredients

• 2 x 400g packs plain pork sausages (we used Taste the Difference)
• 1 tbsp snipped chives (or use wild fennel fronds if you have them)
• 1 x 375g sheet ready-rolled puff pastry
• beaten egg, to glaze
• 1 tsp nigella seeds
• 25g demerara sugar
• ½ tsp fine sea salt
• ¼ tsp ground black pepper
• ½ tsp paprika
• ½ tsp onion granules (optional)
• ½ tsp English mustard powder
• ½ tsp fennel seeds
• ¼ tsp Szechuan peppercorns, optional
• ¼ tsp coriander seeds
• small pinch of chilli flakes
