• 1/2 cup sanding sugar
• 1 T (or more) ground espresso (Intelligentsia Black Cat Classic is amazing)
• 1 1/2 cups heavy cream
• 3/4 cup plus 2 Tablespoons sugar
• 1 Tablespoon corn syrup
• 2 ounces unsweetened chocolate
• 3/4 teaspoon kosher salt
• 1/8 cup unsalted butter (1 ounce), at room temperature
• 1 Tablespoon coffee extract
