• 600 g small beets scrubbed, trimmed, and cut into thin wedges
• 4 Tbsp extra virgin olive oil divided
• ½ tsp Farm Boy™ Organic Granulated Onion or Onion Powder
• salt and pepper to taste
• 1 container Farm Boy™ Barrel Aged Feta
• ½ cup Farm Boy™ Organic Plain Greek Yogurt
• 1 tsp Farm Boy™ Garlic Flowers
• zest and juice of half a lemon
• ¼ cup chopped fresh dill and/or parsley for garnish
