This apple, cheddar and leek toad-in-the-hole brings a whole new meaning to comfort food

Ingredients

• A drizzle of olive oil
• 6 pork sausages
• 2 tbsp. beef dripping
• 2 apples, cored and thinly sliced
• 1 leek, trimmed, cleaned and cut into batons
• A few sprigs of fresh thyme, leaves picked
• 100 g clothbound Cheddar cheese, grated
• 140 g stoneground unbleached white flour
• A few fresh thyme leaves
• 4 organic and/or free-range eggs, lightly beaten
• 200 mL whole grass-fed milk
• Flaky sea salt and freshly ground black pepper
