Community Shared Agriculture - Winter Squash

Ingredients

• 1 Black Futsu Squash
• 6 tbsp Butter
• Salt
• 2 Stalks Lemongrass (Cut away and compost the tough green portions and bruise the more tender lower portion with the back of a knife before slicing thinly.)
• ½ Medium Onion, chopped
• 1 2-inch piece Fresh Ginger, minced
• 3 Tart Apples, peeled and diced
• Zest of 2 Limes
• 2 tbsp Green Curry Paste
• 2 cans Coconut Milk
• 1 bunch Cilantro, chopped
