• 2 tbsps olive oil
• 1/2 cup shredded carrots
• 1/2 cup shredded onion
• 1 tsp smoked paprika
• 1 tsp dried thyme
• 1 tsp celery seed
• 1/4 cup flour
• 4 cups chicken broth
• 3/4 - 1 lb cooked, chopped chicken (I used rotisserie)
• 500g (1 lb) gnocchi (tricoloured used here)
• 2 cups milk
• 2 cups chopped and packed spinach
• salt and pepper to taste
• fresh parsley and/or baby spinach leaves to garnish
