4-Herb Mini Turkey Pot Pies

Ingredients

• 3 cups leftover Butterball turkey roast (or turkey leftovers), cubed
• 6 Tbsp butter
• 1 white onion, diced
• 1 carrot, diced
• 1/2 fennel bulb, diced
• 3 cloves garlic, finely minced
• 1/4 cup all-purpose flour
• 3 cups chicken stock
• 1 Tbsp Dijon mustard
• 1/4 bunch dill, finely chopped
• 1/4 bunch mint, finely chopped
• 1/4 bunch parsley, finely chopped
• 1/2 bunch tarragon, finely chopped
• 1/2 cup frozen peas
• 1/4 cup whipping cream
• 1/2 lemon, juiced
• 6 sheets puff pastry
• 1 egg, for egg wash (add 2 Tbsp. water to eggs and beat)
• Salt
