• Salt and black pepper, to taste
• 2 tablespoons olive oil
• 4 slices of your favorite bread (ciabatta, baguette, or rustic country bread work well)
• 4 tablespoons pesto sauce
• 2 tablespoons greek yoghurt
• 4 tablespoons sun-dried tomatoes, diced
• 1-2 cup fresh rocket salad (arugula)
• 1/2 cup fresh basil
• 1/2 lemon
• 4 slices mozzarella cheese
• 1 tablespoon Red Wine Vinegar
• 1 tablespoon tomato oil (can use olive oil if tomatoes are dry, not marinated)
