• 4 tsp teaspoons olive oil, divided
• 1 brown onion, finely chopped
• 1 tsp teaspoon sea salt
• ½ tsp teaspoon freshly ground black pepper
• 4 slices provolone cheese
• 4 soft hotdog or brioche hotdog rolls
• 2 tbsp tablespoons Japanese mayonnaise (e.g. Kewpie), to serve
• tomato sauce
• pickled red chillies
• pickled jalapenos
