Spring vegetable soup

Ingredients

• 3 tbsp olive oil
• 4 garlic cloves (roughly chopped)
• 1 onion (roughly chopped)
• peels from white asparagus
• 1 carrot (cubed)
• 1 celery stalk (sliced)
• 1 leek (sliced, white part only)
• 4 scallions (sliced, dark green part only (keep the white part for garnish))
• 4 parsley sprigs
• 1 tbsp white miso paste (or lemon juice)
• 2 tbsp soy sauce
• salt (to taste)
• black pepper (to taste)
• 3 1/2 ounces green asparagus
• 5 ounces white asparagus
• ½ cauliflower
• 3 1/2 ounces green peas
• 2 tbsp chopped basil leaves
• 1 tbsp chopped parsley
• ¼ garlic clove (minced)
• 5 tbsp olive oil
• ¼ tsp salt
• 8 radishes (sliced)
• fresh dill (chopped)
• chopped scallions (white parts)
