Chicken Risotto ? Recipe

Ingredients

• 1 tsp - 1 tbsp olive oil
• 2 1/2 oz / 75 g bacon
• 12 oz / 350 g chicken thigh fillets , cut into bite size pieces
• 13 oz / 400 g mushrooms , sliced
• 2 tbsp / 30 g unsalted butter
• 2 garlic cloves , minced
• 1 onion , finely diced
• 1/2 cup / 125 ml white wine
• 1 1/4 cups / 250 g arborio risotto rice
• 4 cups / 1 liter chicken broth/stock
• 1/2 cup / 35 g freshly grated parmesan cheese
• 1 - 3 tbsp / 15 - 50 g unsalted butter
• Freshly chopped parsley
