Ingredients

• 3 c. all-purpose flour
• 1 ½ tsp baking powder
• ¼ tsp salt
• 3 large eggs
• 1 c. sugar
• ½ c. pure olive oil (or vegetable oil, but NOT extra virgin olive oil)
• 1 tsp vanilla extract
• ½ tsp almond extract
• a few drops lemon extract (optional)
• 1 c. chopped pistachios
