Ingredients

• 2 lemons, zest finely grated
• 2/3 cup (150 ml) honey
• 4 egg yolks
• 1 egg
• 1 oeuf
• 1/2 cup (115 g) unsalted butter, diced
• 1 cup (250 ml) 35% whipping cream
• 1/4 cup (35 g) roasted shelled pistachios, coarsely chopped
• 1/2 cup (75 g) unbleached all-purpose flour
• 1/4 tsp baking powder
• 3 eggs, at room temperature
• 1/2 cup (105 g) sugar
• 1/2 tsp (2.5 ml) vanilla extract
• 1/4 cup (60 ml) vegetable oil
• 2 tbsp (30 ml) limoncello (see note)
• 2 tbsp (30 ml) honey
• 1 tbsp (15 ml) lemon juice
• 4 egg whites, at room temperature
• 1 cup (210 g) sugar
• 1/4 cup (60 ml) water
