• 100ml pasteurised egg whites
• 700g icing sugar, sifted
• 2 tbsp lemon juice
• 240g golden caster sugar
• 315g icing sugar, sifted
• 600g ground almonds
• 120g eggs (about 3 eggs)
• 1 tsp almond extract
• 2 tsp extra-strong red food-colouring gel
• 200g desiccated coconut
• 200g icing sugar, sifted
• 2 battery-operated tea lights
