• 2 tbsp (1 ) oil
• 450 g (1 lb) lean stewing steak, cubed
• 3 tbsp plain flour
• 300 ml (½ pint) unsweetened orange juice
• 300 ml (½ pint) beef stock
• 125 g (5 oz) button mushrooms
• 2 tsp white wine vinegar
• 2 tsp soft brown sugar
• ½ tsp Cinnamon Ground
• 1 Bouquet Garni
• Zest of half an orange
• ¼ tsp Ground White Pepper
• ¼ tsp Sea Salt
• A few strips of blanched orange peel, to garnish
