Chicken Schnitzels Recipe

Ingredients

• 2 lbs of chicken thighs (will work just as well with chicken breast)
• 1 egg
• 2 TBSP mayo
• 2 tsp yellow mustard (dijon will work, too)
• 1/4 tsp smoked paprika
• 1/2 tsp sweet (regular paprika)
• 1/2 tsp salt
• 1-1/2 TBSP flour
• 1 TBSP clarified butter
• 2 TBSP avocado oil (or any liquid oil of your choice)
• 1 cup bread crumbs (panko will work, too.)
