Ingredients

• 4 ounces arugula
• 1 fennel bulb, sliced paper thin with your 4-in-1 Glass Mandoline
• 1 Bartlett pear, sliced thin
• ½ of a head of radicchio, sliced thin
• ¼ cup dried cherries
• ¼ cup pistachios, roasted
• ¼ cup gorgonzola cheese
• ¼ cup good olive oil
• 2 tablespoons champagne vinegar
• 2 tablespoons fresh orange juice
• 1 tablespoon Dijon mustard
• 1 tablespoon honey
• 1 garlic clove, minced
• ¼ teaspoon sea salt
• ¼ teaspoon freshly ground black pepper
