Ingredients

• 1/4 cup of vegetable oil
• 1/4 cup of all-purpose flour
• ~4 1/2 cups of a flavorful liquid (see flavorings)
• 1/2 onion, chopped
• 4 cloves of garlic, crushed
• 1/2 tbsp ground cumin
• A 28-oz can of whole tomatoes, undrained
• 1 cup chicken broth
• 1/2 cup of chile paste
• 1 chipotle chile in adobo sauce, chopped (optional)
• 1 spoonful of adobo suace (optional)
• 1/2 tbsp oregano
• 1 tbsp packed brown sugar
• 1 tbsp liquid smoke
• 1-2 tsp salt (to taste)
• Black pepper (to taste)
