Ingredients

• 400 ml Coconut Milk
• 4 slices Crusty Bread to serve
• 2 cloves Garlic finely chopped
• 1/2 tsp Ground Black Pepper
• 1 Lime zest and juice
• 2 small Onion finely chopped
• 1 1/2 tsp Salt
• 1 pinch SuperValu Chilli Flakes to garnish
• 1/2 SuperValu Fresh Red Chilli or green, deseeded and finely chopped
• 2 tbsp SuperValu Oil
• 2 large Sweet Potatoes (approx 850g), scrubbed well
• 1 L Vegetable Stock
