CHICKEN WITH LEMON & GARLIC - Manitoba Chicken

Ingredients

• 1/4 cup (60 ml) olive oil
• 9 cloves garlic, thinly sliced
• 1/3 cup (80 ml) white wine
• 1 lemon, juice and zest
• 1/2 tsp (2.5 ml) EACH dried oregano and dried rosemary
• 1 tsp (5 ml) minced fresh thyme leaves
• 1/2 tsp (2.5 ml) red pepper flakes
• 6 boneless chicken breasts, skin on
• 1 Tbsp (15 ml) olive oil
• Salt and pepper to taste
• 1 can artichoke hearts, drained
• 1 lemon, cut into 8 wedges
