This is based on a homely Italian dish sometimes known as pizza rustica. It's as good cold as it is hot, so any leftovers are good news.
Ingredients
- 40g dried mixed wild mushrooms
- 1 tbsp olive oil
- 2 tbsp butter
- 1 medium onion, finely diced
- 2 garlic cloves, finely diced
- 400g can peeled plum tomatoes
- About 750g cavolo nero or kale
- Small bunch of fresh tarragon
- Small bunch of fresh flatleaf parsley
- 750g ricotta
- 50g grated vegetarian Parmesan
- 2 large free-range eggs, plus 1 free-range egg, for glazing
- 50g fresh breadcrumbs
- 500g pack shortcrust pastry
