Fish and potato doesn't always have to equal fish and chips. These fishcakes require minimal effort and use fresh summer produce – an easy midweek dinner.
Ingredients
- 700g floury potatoes, such as maris piper, cut into even chunks
- 60g rocket
- 150g frozen peas, defrosted
- 180g raw sustainable prawns, peeled and roughly chopped
- Finely grated zest and juice 1 lemon
- 1 large free-range egg, beaten
- Small bunch fresh chives, snipped
- 250g boneless and skinless cod fillets
- Plain flour for dusting
- 3 tbsp olive oil
- To serve
- Poached eggs and crisp green salad – optional
