Lancashire cheese rarebit recipe, with roasted baby artichokes

Ingredients

• 600 g baby artichokes
• Olive oil
• Salt and pepper
• 1 lemon (juice only)
• 50 g breadcrumbs
• 2 tbsp olive oil
• 1 lemon (zest only)
• 10 g parsley (picked and finely chopped)
• 2 cloves garlic (finely chopped)
• 200 g Mrs Kirkham’s Lancashire (or other Lancashire cheese, grated)
• 1 tbsp plain flour
• 120 ml milk
• 2 egg yolks
• 1 tsp Dijon mustard
