Ingredients

• 3 tbsp olive oil
• 1 large eggplant, diced into 3cm chunks
• 2 x 400g can chickpeas, drained and rinsed
• 1 x 400g can coconut cream
• 3 cloves garlic, minced
• 1 tsp cumin
• 1 tsp ground coriander
• 1 tsp oregano
• 1 tsp smoked paprika
• 1/2 tsp cinnamon
• ½ tsp salt
• Extra Salt and pepper to taste
• 1 bunch coriander
