  • 1 cup uncooked long- or short-grain brown rice
  • 6 thick slices slab bacon, diced (about 6 ounces)
  • 2 tablespoons olive oil
  • 2 cups chopped yellow onions
  • 1 cup chopped celery plus some leaves
  • 1 cup diced (1/4 inch) carrots
  • 2 cups sliced white button mushrooms (about 6 ounces)
  • 1/2 cup slivered red bell pepper
  • 1/2 cup chopped unblanched almonds
  • 1 tablespoon finely chopped garlic
  • 1/2 cup chopped dried apple slices
  • 1/2 cup golden raisins
  • 1/4 cup finely chopped Italian (flat-leaf) parsley
  • 1 tablespoon fresh thyme leaves, stripped from stems
  • 1 teaspoon minced fresh sage leaves, stripped from stems
  • 1 teaspoon salt, or to taste
  • Freshly ground black pepper, or to taste
  • 1 pint basket red or white pearl onions (about 2 cups)
  • 1 tablespoon olive oil
  • 1 teaspoon granulated sugar
