Ingredients

• 1 cup self-raising flour
• 1/3 cup plain flour
• 1 teaspoon ground cinnamon
• 3/4 cup firmly packed brown sugar
• 1/3 cup desiccated coconut
• 450 gram can crushed pineapple in syrup, drained
• 2 large overripe bananas, mashed
• 2 eggs, at room temperature
• 2/3 cup sunflower oil
• 1 teaspoon finely grated orange zest
• Orange icing
• 1 1/2 cup icing sugar
• 20 gram butter, at room temperature
• 2 tablespoon freshly squeezed orange juice, approximately
