Ingredients

• 1 (12-ounce) package precooked sausage, preferably chicken and apple sausage, cut into 1/2-inch rounds
• 2 medium red or yellow bell peppers, sliced
• 6 green onions, cut into 2-inch pieces
• 2 cups cherry tomatoes
• 2 cups sugar snap peas
• 3 tablespoons extra-virgin olive oil
• 2 teaspoons paprika
• 1 tablespoon dried onion flakes
• 1 tablespoon dried parsley
• 1 teaspoon coarse kosher salt
• 1/2 teaspoon black pepper, freshly grated
• bread, of your choice, to taste, toasted and warm, for serving
• parmesan cheese, optional, to taste, freshly grated, for garnish
