How to make old fashioned romesco dip? - Savoury Trips
Romesco dip is a Spanish or Catalan traditional sauce. It is made og roasted red peppers and nuts. Much better flavour is if you add roasted chili pepper.
Ingredients
- 1/4 cup of olive oil
- 6-7 cherry tomatoes
- 1 clove of garlic
- 3 spoons of almonds without skin
- 3 spoons of hazelnuts without skin
- optional - 1 spoon of overbaked walnuts
- 1 spoon of vinegar (balsamic, rice or apple)
- a little bit of chilli to taste
- 5 roasted and peeled red peppers
- salt, pepper to taste
- Bake peppers, tomato, and garlic all together in the oven. Peel the skin off the tomato as best as you can.
- While the peppers, tomato and garlic are being baked, put the hazelnuts, almonds and walnuts (optional) in a cloth so that they don't fall out and rub them so that the dry skin comes off.
- Then fry them in a pan on medium temperature.
- Add salt, pepper, olive oil and a little bit of vinegar.
- Put all the ingredients in a blender and mix them all together.
- Serve with fish, white meat or pasta.
