Potato and Tuna Salad with Pesto Dressing - Lola Covington

Ingredients

• 4 Baby Potatoes, Halved
• 1/2 tbsp Pesto
• 1 tsp Olive Oil
• 8 Grape or Cherry Tomatoes
• 4 oz Can Tuna in Water, Drained
• 2 oz Green Beans, Halved (Boiled or Canned)
• 1/2 oz Spinach
• 1/2 cup Fresh Basil Leaves
• 1 Small Clove Garlic, Peeled
• 2 Tablespoons Pine Nuts
• 1/4 Cup Freshly Grated Parmesan
• 2 tbsp Olive Oil
• Salt and Freshly Ground Black Pepper, to Taste
