Railway lamb curry - Harrison Catering

Ingredients

• 700g lamb shoulder (or mutton), diced
• 20ml vegetable oil
• ¼ tsp black onion seeds
• 8 cardamom, green
• 1 cinnamon stick
• 1 tbsp cumin powder
• 4 red onions, sliced
• 2 tbsp ginger purée
• 2 garlic cloves, crushed
• 2 tsp red chillies, chopped
• 1 tbsp coriander, chopped
• ¼ tsp salt
• 300g chopped tinned plum tomatoes
• 1 tsp tomato paste
• 1 ltr vegetable stock
• ½ tsp garam masala powder
• ½ bunch coriander leaves, chopped for garnish
