Ingredients

• 600 g stewing beef such as blade steak (Irish beef), at room temperature
• 100 g of pancetta, sliced
• 2 tbsp olive oil
• 3 white onions, sliced
• 1 clove of garlic, halved
• 1 bay leaf
• 1 sprig of rosemary
• 1 tin of tomato cubes (400 g)
• 250 ml of dry white wine
• 350 g small tomatoes in different colours (eg Wild Wonders)
• 3 sprigs of fresh basil
• salt and freshly ground black pepper
