Spicy Green Onion Corn Muffins

Ingredients

• 1/4 c Grated red onion
• 1/4 c Sour cream
• 1 c Buttermilk
• 1/4 c Vegetable oil
• 1/3 c Finely chopped green onion;
• 1/2 c Fresh Cilantro chopped
• 1 tb Pure ground chili powder;
• 1 Egg
• 3/4 c Grated Monterey Jack cheese
• 1/4 c Brown Sugar firmly packed
• 2 ts Baking Powder
• 1 1/4 c Unbleached white flour
• 1/4 ts Salt
• 3/4 c Cornmeal; blue or yellow;
• 1/2 ts Baking soda
