• 1 pound sliced smoked bacon, cut into 1/2″ strips
• 2 cups ketchup
• 1/2 cup packed light brown sugar
• 1/2 cup cider vinegar
• 2 Tablespoons prepared yellow mustard
• 3-5 cloves of garlic, peeled and minced
• 1 teaspoon Kosher salt
• 1/4-1/2 teaspoon crushed red pepper flakes
• 4 cups shredded Cheddar or Monterey Jack cheese
• freshly ground black pepper, to taste
• 1 small onion, peeled and finely chopped
